  • 4 bell peppers
  • 1 tbsp olive oil
  • 4 cups fresh spinach
  • 1 tub (15 oz) ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 2 large eggs

Instructions

  1. Preheat the oven to 400°F (204°C). Halve the bell peppers, remove seeds and ribs, then place cut side up on a parchment-lined baking sheet. Brush with olive oil and bake for 20 minutes.
  2. Microwave spinach until wilted (about 15–30 seconds), then chop. In a mixing bowl, combine chopped spinach, ricotta, mozzarella, parmesan, green onions, basil, parsley, herbs, eggs, salt, and pepper.
  3. Fill each pepper half with the ricotta mixture generously.
  4. Mix breadcrumbs with oil and sprinkle over stuffed peppers.
  5. Bake at 350°F (176°C) for another 30 minutes or until golden brown.
