  • 2 tablespoons butter
  • 1 pound bone-in chicken thighs
  • 3 celery stalks (diced)
  • 2 medium carrots (peeled and sliced)
  • 1/2 yellow onion (diced)
  • 1/2 tablespoon dried thyme
  • 1/2 tablespoon dried basil
  • 2 cloves garlic (minced)
  • 2 bay leaves
  • Salt and black pepper to taste
  • 8 cups chicken stock
  • 12 ounces frozen egg noodles

Instructions

  1. In a large stock pot over medium heat, melt the butter. Season the chicken thighs with salt and pepper, then add them to the pot, cooking for about 3 to 4 minutes on each side until browned.
  2. Remove the chicken from the pot and discard the skin. Reserve about 2 tablespoons of fat.
  3. Add diced celery, carrots, onion, and minced garlic to the pot. Sauté for about 3 to 4 minutes until softened. Stir in thyme, basil, salt, and pepper.
  4. Pour in chicken stock and bring to a boil. Return chicken thighs to the pot and reduce heat; let simmer gently for about 25 to 30 minutes.
  5. Remove cooked chicken again; increase heat to boil and add frozen egg noodles. Cook according to package instructions (about 20 minutes).
  6. Once noodles are tender, shred cooled chicken into bite-sized pieces and return it to the pot before serving hot.
