  • 41/2 cups fresh or frozen corn
  • 71/2 ounces thick-sliced bacon
  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 11/2 cups diced yellow onion
  • 1 cup diced carrot
  • 3 cups diced baby gold potatoes
  • 2 cups chicken broth
  • 3 cups whole milk
  • 1/2 cup heavy cream

Instructions

  1. If using fresh corn, cut kernels from cobs; if frozen, thaw.
  2. Cook diced bacon in a large pot over medium-high heat until crispy; set aside.
  3. Sauté onion, carrot, and garlic in the same pot with butter until golden.
  4. Add flour; stir for one minute before adding potatoes and seasonings.
  5. Pour in chicken broth and milk; add bay leaf and corn cobs (if using).
  6. Simmer covered for 20–25 minutes until thickened; discard bay leaf and corn cobs.
  7. Stir in corn kernels and heavy cream; cook another 5–7 minutes.
  8. Top bowls with reserved bacon and fresh herbs before serving.
