  • 11 1/2 lbs boneless, skinless chicken breasts
  • 1 medium yellow onion, diced
  • 3 large carrots, sliced
  • 2 stalks celery, sliced
  • 34 cloves garlic, minced
  • 8 cups reduced sodium chicken broth
  • 8 oz egg noodles
  • Fresh parsley for garnish

Instructions

  1. Trim excess fat from the chicken breasts and chop the vegetables.
  2. In the slow cooker, layer the chicken at the bottom followed by the onions, carrots, celery, garlic, thyme, rosemary, salt, and pepper.
  3. Add better than bouillon and pour in the chicken broth.
  4. Cook on LOW for 6-8 hours or HIGH for 3-4 hours until chicken is tender.
  5. Shred the chicken with two forks and return it to the pot along with egg noodles.
  6. Cook on LOW for an additional 10-15 minutes until noodles are tender.
  7. Adjust seasoning as needed and serve hot garnished with parsley.
