  • 1/2 cup hot water
  • 1/4 cup unsalted butter, room temperature
  • 1/2 cup powdered sugar
  • 5 oz marshmallow creme
  • 4 oz semi-sweet chocolate chips
  • 6 tbsp heavy whipping cream
  • 2 tbsp unsalted butter, room temperature
  • 1/2 cup powdered sugar
  • 1 tbsp milk
  • Splash of vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  3. In another bowl, combine the egg, milk, vegetable oil, and vanilla; mix well.
  4. Combine wet and dry ingredients; gradually stir in hot water until smooth.
  5. Pour batter into muffin pan and bake for about 20 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool completely before filling with marshmallow cream.
  7. Top with chocolate ganache and decorate with frosting.
