  • 2 tbsp honey
  • 2 tbsp rose harissa paste
  • 150g feta cheese
  • 300g Greek yogurt
  • 240g cooked chickpeas
  • Olive oil
  • Cinnamon
  • Salt
  • Black pepper
  • Lemon juice

Instructions

  1. Preheat oven to 190°C (375°F).
  2. Trim carrots and place in a roasting tray. Drizzle with olive oil, sprinkle with cinnamon, salt, and pepper. Roast for 30 minutes until tender.
  3. For the whipped feta, combine Greek yogurt and crumbled feta in a bowl; whisk until smooth.
  4. Toss drained chickpeas onto the roasting tray after 30 minutes and roast for an additional 15 minutes.
  5. Mix honey with harissa paste in a small bowl.
  6. Pour the honey-harissa mixture over roasted carrots and chickpeas; toss gently to coat.
  7. Serve by spooning whipped feta onto a plate and topping it with the roasted mixture.
