  • 50g unsalted butter (divided)
  • 3 garlic cloves (finely minced)
  • 2 cups frozen corn (no need to thaw)
  • 1 cup long grain rice (uncooked)
  • 1.5 cups low-sodium chicken stock
  • Salt and pepper to taste
  • 2 green onion stems (finely sliced)

Instructions

  1. In a small pot, melt half the butter over high heat and sauté the minced garlic for about 15 seconds.
  2. Add the frozen corn and half of the salt; stir for 2 minutes.
  3. Stir in the uncooked rice for 30 seconds to coat it in the mixture.
  4. Pour in chicken stock, add remaining salt and pepper; bring to a simmer, cover, and reduce heat to medium-low.
  5. Cook undisturbed for 12 minutes; then let it rest covered for another 10 minutes.
  6. Fluff with remaining butter and fold in green onions before serving.
