  • 1 small yellow onion, diced
  • 2 cloves garlic, minced

  • 1/4 teaspoon ground cumin
  • 2 tablespoons tomato paste
  • 2 tablespoons hot honey (plus more for drizzling)
  • 1 cup cooked rice or quinoa
  • 1/2 cup crumbled feta or goat cheese
  • 1 avocado, sliced
  • 2 tablespoons chopped fresh cilantro or parsley

Instructions

  1. Preheat the oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender.
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat if necessary.
  3. Add diced onion and minced garlic to the beef, sautéing until softened.
