  • 8 oz raw shrimp
  • 1 large egg white
  • 1/2 cup plain panko breadcrumbs
  • 1/4 cup green onions, finely chopped
  • 2 cups canola oil (for frying)
  • 1 tbsp plain Greek yogurt
  • 2 tbsp white wine
  • 1 tbsp shallot, minced
  • 2 tbsp parsley, finely chopped (divided)
  • 2 tbsp cornstarch
  • 1 tsp ginger, minced

Instructions

  1. Mince the raw shrimp in a food processor until finely chopped.
  2. In a mixing bowl, combine minced shrimp with shallot, egg white, white wine, parsley (reserve some), green onions, cornstarch, and ginger. Mix well.
  3. Roll the mixture into about 12 balls and coat each with panko breadcrumbs.
  4. Prepare the dipping sauce by mixing ketchup, Japanese mayo, Greek yogurt, and reserved parsley in a small bowl.
  5. Heat canola oil in a deep fryer over medium heat. Fry the shrimp balls for about 2 minutes or until golden brown.
  6. Drain on paper towels before serving with dipping sauce.
