  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 pound cremini mushrooms, sliced
  • 8 ounces shiitake mushrooms, stemmed and sliced
  • 1/2 cup dry sherry
  • 6 cups vegetable broth (or chicken broth)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/2 cup sour cream
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion for 5-7 minutes until softened. Add garlic and cook for another minute.
  2. Stir in sliced cremini and shiitake mushrooms, cooking for about 8-10 minutes until browned.
  3. Deglaze with dry sherry, scraping up any browned bits, then let it simmer for a couple of minutes.
  4. Add broth, thyme, smoked paprika, salt, and pepper; bring to a gentle simmer for at least 20 minutes.
  5. In a separate saucepan, melt butter and whisk in flour to create a roux. Gradually mix this into the soup to thicken.
  6. Stir in sour cream off heat until fully incorporated. Adjust seasoning as needed before serving hot.
