Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp tapioca starch

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3 minutes).
  3. Add the egg and vanilla extract; mix until fully combined.
  4. In another bowl, whisk together the flour, baking powder, tapioca starch, and salt. Gradually combine this with the wet ingredients until just mixed.
  5. Drop spoonfuls of dough onto prepared baking sheets about two inches apart; flatten slightly.
  6. Bake for 10-12 minutes until the edges are golden. Sprinkle granulated sugar on top while warm and use a kitchen torch to caramelize.
