  • 1/2 cup unsalted butter (softened)
  • 3 large eggs
  • 1 cup Earl Grey tea (brewed)
  • 2 tsp vanilla extract
  • Pinch of salt
  • For the Frosting: 2 cups powdered sugar
  • 1/2 cup unsalted butter (softened)
  • 2 tsp vanilla extract
  • 1 tbsp food-grade lavender (culinary-grade)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round cake pans or line with parchment paper.
  2. Brew Earl Grey tea by steeping two bags in one cup of boiling water for five minutes; set aside to cool.
  3. In a mixing bowl, whisk together flour, baking powder, sugar, and salt.
  4. In another bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  5. Pour in cooled tea and vanilla extract; blend until combined.
  6. Gradually add dry ingredients into the wet mixture, stirring gently until just combined.
  7. Divide the batter evenly between prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Cool in pans for ten minutes before transferring to wire racks to cool completely.
  8. For frosting, beat together powdered sugar, softened butter, vanilla extract, and lavender until smooth and creamy.
  9. Frost the cooled cake generously between layers and on top before serving.
