  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar (for crust)
  • 2 (8 oz) packages cream cheese, softened
  • ¾ cup granulated sugar (for filling)
  • 2 tsp vanilla extract
  • 3 large eggs, at room temperature
  • 1 cup toasted pecans, roughly chopped
  • ¾ cup brown sugar
  • ¼ cup maple syrup
  • ¼ cup light corn syrup

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter and stir in ½ cup sugar. Press into a greased baking pan to form the crust.
  2. In a separate bowl, beat softened cream cheese until smooth. Gradually add ¾ cup sugar, then mix in vanilla and eggs one at a time until just combined.
  3. Pour the cheesecake filling over the crust and bake for about 25 minutes until slightly jiggly in the center.
  4. For the topping, mix chopped pecans, brown sugar, maple syrup, and corn syrup in a bowl. Spread over the baked cheesecake.
  5. Return to the oven and bake for an additional 20–25 minutes or until bubbly and golden brown.
  6. Cool completely before slicing into bars.
