  • 34 pounds chuck roast or bottom round beef roast
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon onion powder
  • 1 tablespoon olive oil
  • 1.25 ounce package dry au jus mix
  • 12 ounces beer (1 can)
  • 3 tablespoons melted butter
  • ¼ teaspoon garlic powder
  • 12 slices provolone cheese
  • 8 large rolls

Instructions

  1. Season the beef roast with salt, pepper, and onion powder.
  2. In the Instant Pot, heat olive oil on sauté mode and sear the beef until browned (about 4-5 minutes per side).
  3. Add beer, dry au jus mix, melted butter, and garlic powder to the pot.
  4. Seal the lid and cook at high pressure for 100 minutes; allow natural release for 20 minutes.
  5. Remove beef, shred it, and serve on rolls topped with provolone cheese. Drizzle with au jus for dipping.
