  • 1 tablespoon lemon juice
  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ cup cold unsalted butter, cubed

Instructions

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan and pre-bake for 10 minutes.
  2. Beat softened cream cheese until smooth. Add granulated sugar and vanilla; mix well. Incorporate eggs one at a time, then fold in sour cream.
  3. Pour the cheesecake filling over the cooled crust. In another bowl, mix diced apples with brown sugar, cinnamon, cornstarch, water, and lemon juice; layer over the cheesecake.
  4. For the crumble topping, combine flour, brown sugar, cinnamon, and cold butter until crumbly; sprinkle over apples.
  5. Bake at 325°F (160°C) for 60-65 minutes until slightly jiggly in the center. Cool completely before refrigerating for at least four hours before serving.
