  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 2 cups diced apples (preferably Granny Smith)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, granulated sugar, brown sugar, cinnamon, and salt until well combined.
  3. In another bowl, cream the softened butter and eggs together until smooth. Gradually add milk while whisking.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in the diced apples.
  5. For the crumble topping, mix together additional flour, brown sugar, cinnamon, and melted butter until crumbly.
  6. Divide the batter among muffin cups and sprinkle with crumble topping. Bake for 20–25 minutes or until golden brown.
