  • 1 cup diced chicken thighs
  • 1 cup mixed fresh vegetables (peas, carrots, bell peppers)
  • 2 tsp grated fresh ginger
  • 3 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add diced chicken thighs, season with salt and pepper, and cook until golden brown, about 8-10 minutes.
  2. Push the chicken to one side of the skillet. Add more oil if necessary and sauté the mixed vegetables and ginger until tender-crisp, about 5 minutes.
  3. Add the cooked rice to the skillet, breaking up any clumps. Stir well to combine.
  4. Pour in soy sauce and sesame oil; stir until everything is evenly coated. Adjust seasoning to taste.
  5. Cook for an additional few minutes until heated through. Garnish with green onions before serving.
