  • 2 cups cooked day-old rice
  • 1 pound boneless chicken breast, diced
  • 4 strips bacon, chopped
  • 1 cup mixed fresh vegetables (bell peppers, peas, carrots)
  • 2 large eggs, beaten
  • 3 tablespoons low-sodium soy sauce
  • 2 cloves garlic, minced
  • 2 green onions, chopped

Instructions

  1. Prepare your ingredients: Dice the chicken and chop vegetables into small pieces.
  2. In a large skillet over medium-high heat, cook the bacon until crispy. Remove and set aside.
  3. In the same skillet, add diced chicken and cook until golden brown (about 5 minutes). Remove and set aside.
  4. Scramble the eggs in the skillet until just cooked; remove and set aside.
  5. Sauté garlic and mixed vegetables in the skillet for about 3 minutes until tender yet crisp.
  6. Return the chicken, bacon, and scrambled eggs to the skillet. Add cooked rice and soy sauce; stir well to combine.
  7. Finish with chopped green onions before serving.
