  • 4 large flour tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 1 can (14.5 oz) diced tomatoes with green chilies

  • 1 bell pepper, diced (any color)
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by dicing the onions and bell peppers.
  2. In a skillet over medium heat, heat the olive oil. Sauté the onions and bell peppers until softened, then add the ground beef and cook until browned.
  3. Stir in the diced tomatoes along with chili powder and cumin; mix well to combine.

  5. Place the rolled enchiladas seam-side down in an oven-safe dish. Top with any remaining beef mixture and cheese. Bake at 350°F for about 20 minutes until golden brown.
