  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 slices deli-style turkey
  • 4 slices Swiss cheese
  • 1 cup panko breadcrumbs
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 1 cup low-sodium chicken broth
  • 1 teaspoon agar-agar powder

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Place each chicken breast between plastic wrap and pound to about half an inch thick.
  3. Spread mustard on each breast, layer with turkey and cheese, then roll tightly.
  4. Coat rolled chicken in olive oil and then in panko breadcrumbs.
  5. Place seam-side down in the baking dish and bake for 25-30 minutes until internal temperature reaches 165°F (74°C).
  6. In a saucepan, combine chicken broth and agar-agar over medium heat until thickened; drizzle over baked rolls before serving.
