  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup whole milk
  • 1 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup sweetened coconut flakes
  • 1 cup toasted pecans, coarsely chopped
  • 1 can (12 oz) evaporated milk
  • 2 tbsp agar-agar powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round cake pans and line with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and sugar. Set aside.
  3. In another bowl, beat eggs, milk, vegetable oil, and vanilla until smooth. Combine with dry ingredients until just mixed.
  4. Divide the batter between the prepared pans and bake for 30–35 minutes or until a toothpick comes out clean.
  5. For the frosting, combine evaporated milk, coconut flakes, pecans, and agar-agar in a saucepan over medium heat for about five minutes or until thickened.
  6. Once cakes are cool, layer them with half of the frosting between them and top with remaining frosting.
