  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 3/4 cup brown sugar
  • 3/4 cup unsalted butter (softened)
  • 1 large egg
  • 1/2 cup molasses

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, cream the softened butter and brown sugar until fluffy. Add the egg and molasses; mix until smooth.
  4. Gradually stir in the dry ingredients until just combined.
  5. Scoop tablespoon-sized balls of dough onto prepared sheets, spacing them two inches apart.
  6. Bake for 10–12 minutes until slightly puffed but soft in the center. Cool on sheets for five minutes before transferring to wire racks.
