  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar (for crust)
  • 1/4 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar (for filling)
  • 1/2 cup fresh lemon juice
  • Zest of 2 lemons
  • 1 tsp culinary lavender (dried)
  • 1/2 tsp baking powder
  • 1 tsp agar-agar powder
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a mixing bowl, combine flour and 1/2 cup granulated sugar. Add cold butter and mix until crumbly. Press into the bottom of the prepared dish.
  3. Bake the crust for about 15 minutes until lightly golden.
  4. In another bowl, whisk together lemon juice, zest, remaining sugar, baking powder, agar-agar powder, and lavender until smooth.
  5. Pour filling over the warm crust and bake for an additional 20-25 minutes until set but slightly jiggly in the center.
  6. Cool to room temperature before refrigerating for at least two hours. Dust with powdered sugar before serving.
