  • 4 large eggs (room temperature)
  • 1 cup chopped walnuts or pecans (optional)
  • For the Cream Cheese Frosting:
  • 8 oz softened cream cheese (full-fat)
  • 1/2 cup unsalted butter (softened)
  • 4 cups powdered sugar (sifted)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cinnamon, baking powder, baking soda, and salt.
  3. In another bowl, mix the grated carrots, vegetable oil, and eggs until well combined. Add this mixture to the dry ingredients and stir until just combined.
  4. Fold in the chopped nuts if using.
  5. Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Allow to cool completely before frosting.
  6. For the frosting, beat together softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract until creamy.
  7. Once cooled, stack the cakes with cream cheese frosting in between layers and on top.
