  • 1/2 cup granulated sugar (100g)
  • 1 cup heavy cream (240ml)
  • 1 tsp pure vanilla extract
  • 1 tsp agar-agar powder
  • 1/4 cup water (60ml)

Instructions

  1. Rinse raspberries under cool water and pat dry. Reserve half a cup for garnish.
  2. Blend remaining raspberries with sugar until smooth. Strain through a fine-mesh sieve to remove seeds.
  3. In a saucepan, dissolve agar-agar in water over low heat, stirring until fully dissolved; let cool slightly.
  4. Whip heavy cream until soft peaks form. Gently fold raspberry puree and agar-agar mixture into whipped cream until combined.
  5. Spoon into serving glasses and refrigerate for at least one hour until set. Garnish with reserved raspberries before serving.
