  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 cup smooth peanut butter (unsweetened)
  • 1/2 cup low-sodium soy sauce
  • 1 cup chicken broth
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons cornstarch mixed with 2 tablespoons water

Instructions

  1. Gather and prepare all ingredients by chopping garlic and ginger.
  2. (Optional) In a skillet over medium-high heat, sear chicken breasts for about 3 minutes on each side until golden brown.
  3. In a mixing bowl, whisk together peanut butter, soy sauce, chicken broth, honey (or maple syrup), minced garlic, and ginger until smooth.
  4. Place seared (or raw) chicken in the slow cooker and pour the peanut sauce over it.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Once cooked, remove chicken from the slow cooker. Mix cornstarch with water and stir into the juices to thicken. Return chicken to the pot before serving.
