  • 1 ½ tsp baking powder
  • ¾ cup granulated sugar
  • ½ cup unsalted butter (softened)
  • 2 large eggs
  • ½ cup milk (or dairy-free alternative)
  • 1 cup fresh strawberries (finely chopped)
  • ½ cup mango puree
  • 1 tsp vanilla extract
  • ½ cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 2 tbsp milk

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, cream together softened butter and sugar until light and fluffy. Beat in eggs one at a time.
  3. In another bowl, whisk together flour and baking powder. Gradually add to wet ingredients alternating with milk until combined.
  4. Gently fold in strawberries and mango puree.
  5. Fill liners two-thirds full with batter and bake for 18–20 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool before frosting with buttercream and garnishing with fruit slices.
