  • 3 tbsp Thai red curry paste

  • 2 stalks fresh lemongrass
  • 1 cup fresh cilantro, chopped

Instructions

  1. In a large bowl, mix ground chicken or turkey with minced ginger and 2 tablespoons of red curry paste until well combined. Roll into small dumplings (about 1 inch in diameter).
  2. In a large pot over medium heat, bring vegetable broth to a gentle simmer. Stir in coconut milk and remaining tablespoon of red curry paste, adding bruised lemongrass stalks.
