  • 1.5 lbs raw shrimp, peeled and deveined
  • 1 cup fresh pineapple juice
  • 1/3 cup coconut aminos
  • 2 tsp apple cider vinegar
  • 1/2 cup ketchup
  • 3 tbsp raw honey
  • 1 ginger piece (3 inches), grated
  • 3 cloves garlic, minced
  • 2 large red bell peppers, cut into chunks
  • 1 small pineapple, sliced

Instructions

  1. Soak wooden skewers in water for at least 30 minutes.
  2. In a bowl, whisk together pineapple juice, coconut aminos, apple cider vinegar, ketchup, honey, ginger, garlic, chili flakes, and sesame oil.
  3. Reserve half of the marinade; add shrimp to the remaining marinade and refrigerate for 20-30 minutes.
  4. Preheat grill pan or outdoor grill over medium heat.
  5. Skewer marinated shrimp and grill for 2-3 minutes on each side until cooked through.
  6. Toss bell peppers and pineapple slices with oil and seasonings; grill until charred.
