  • 1 head Iceberg Lettuce
  • 1 head Romaine Lettuce
  • 1 pint Cherry Tomatoes
  • 1 English Cucumber
  • 2 Tablespoons Pepperoncinis
  • 1/4 Red Onion (optional)
  • 8 ounces Fresh Mozzarella
  • 1/4 to 1/2 lb Salami
  • 4 ounces Provolone Cheese
  • Shaved Parmesan Cheese
  • (1) 14-ounce can Chickpeas
  • 1/2 cup Extra-Virgin Olive Oil
  • 1/4 cup Red Wine Vinegar
  • 1 Garlic Clove
  • 1/2 teaspoon Dried Oregano
  • 1/2 teaspoon Dijon Mustard
  • 1/2 teaspoon each Salt and Pepper

Instructions

  1. Chop iceberg and romaine lettuce into bite-size pieces. Dice the cherry tomatoes, cucumber, mozzarella, salami, and pepperoncinis. If desired, slice red onion.
  2. Drain and rinse chickpeas. Optionally toss with olive oil, basil, oregano, and red chili flakes.
  3. In a large mixing bowl, combine all chopped ingredients.
  4. In a separate bowl, whisk together olive oil, red wine vinegar, minced garlic, oregano, mustard, salt, and pepper to create the dressing.
  5. Pour dressing over the salad mixture and toss gently to combine.
