  • 2 cups shredded rotisserie chicken
  • 1/4 lb diced salami or soppressata
  • 1/4 lb diced pepperoni
  • 1/4 cup diced provolone cheese
  • 1/4 cup crumbled feta cheese
  • 2/3 cup diced grape tomatoes
  • 1/3 cup mild banana peppers
  • 1/2 thinly sliced red onion
  • 1/2 cup mayonnaise
  • 3 tablespoons red wine vinegar
  • 12 tablespoons banana pepper juice from the jar (to taste)
  • 1 tsp oregano
  • 1 tsp garlic powder
  • freshly cracked pepper
  • salt to taste (about 1/4 tsp)

Instructions

  1. In a bowl, mix together mayonnaise, red wine vinegar, oregano, garlic powder, and optional banana pepper juice. Adjust seasonings to taste.
  2. In a large mixing bowl, combine shredded chicken, salami, pepperoni, cheeses, tomatoes, banana peppers, and red onion.
  3. Pour most of the dressing over the mixture and toss until evenly coated. Add more dressing if desired.
  4. Store in an airtight container in the refrigerator for up to four days.
