  • 16 ounces penne pasta
  • 1/2 cup mayonnaise
  • 2 tablespoons red wine vinegar
  • 4 ounces ham
  • 4 ounces pepperoni
  • 4 ounces salami
  • 4 ounces provolone cheese
  • 4 ounces shredded iceberg lettuce
  • 1 pint grape tomatoes (halved)
  • 1/2 cup sliced pepperoncini peppers

Instructions

  1. Cook the penne pasta in boiling water until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, whisk together mayonnaise, red wine vinegar, minced garlic, sugar, oregano, salt, pepper, and Parmesan cheese until smooth.
  3. In a large bowl, combine cooled pasta with lettuce, ham, pepperoni, salami, provolone cheese, tomatoes, and pepperoncini. Pour the dressing over the mixture and toss gently.
  4. Chill for at least 30 minutes before serving to enhance flavors.
