  • ¼ cup cornstarch
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons extra virgin olive oil
  • ⅓ cup soy sauce
  • ⅓ cup water
  • ⅓ cup light brown sugar (packed)
  • 1 teaspoon sesame oil
  • 2 teaspoons minced garlic
  • ½ yellow onion (diced)
  • 2 large jalapeno peppers (sliced)
  • Sesame seeds (for garnish)
  • Cooked white rice (for serving)

Instructions

  1. In a large mixing bowl, combine chicken, cornstarch, salt, and pepper. Toss to coat evenly.
  2. In a medium bowl, mix together water, soy sauce, brown sugar, sesame oil, and garlic; set aside.
  3. Heat olive oil in a nonstick skillet over medium-high heat. Add the chicken and cook for 2–3 minutes per side until browned and cooked through (165°F). Remove and keep warm.
  4. In the same skillet, sauté onions and jalapenos for 4–6 minutes until softened.
  5. Return the chicken to the skillet and pour in the sauce mixture. Cook for an additional 2–3 minutes until heated through.
  6. Serve hot, garnished with sesame seeds over cooked white rice.
