  • 2 yellow peaches, pitted and sliced
  • ½ cup peach preserves
  • 1 medium jalapeno pepper, thinly sliced
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic, minced
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes
  • 1 teaspoon kosher salt

  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil

Instructions

  1. For the glaze, mix together the sliced peaches, peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, salt, black pepper, and red pepper flakes in a bowl.
  2. Season the chicken thighs with salt, black pepper, and chili powder in another bowl until evenly coated.
  3. Heat olive oil in a skillet over medium-high heat; add the chicken thighs and cook for 6-7 minutes on each side until golden brown.
  4. Reduce heat to medium-low and pour the peach glaze over the chicken. Add jalapeno slices and simmer for about 5 minutes until slightly thickened.
