  • ½ cup ranch dressing
  • ½ cup mayonnaise
  • 8 pieces bacon
  • 2 medium jalapeno peppers
  • 1 cup sharp cheddar cheese
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons dry ranch seasoning mix
  • 2 teaspoons pepper
  • ½ cup apple cider vinegar
  • ¼ teaspoon black pepper
  • 1 small red onion

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss cubed red potatoes with olive oil, ranch seasoning mix, and pepper. Spread evenly on a baking sheet.
  3. Roast for 30-35 minutes until golden brown, stirring halfway through.
  4. In another bowl, whisk together ranch dressing, mayonnaise, apple cider vinegar, and black pepper.
  5. Once potatoes have cooled slightly, combine them with the dressing mixture along with diced onion, cooked bacon (reserve some for garnish), jalapenos, and shredded cheese.
  6. Mix gently until fully combined and serve garnished with reserved bacon.
