  • 4 tablespoons unsalted butter (divided)
  • 4 garlic cloves (2 smashed, 2 minced)
  • 1 cup heavy cream
  • 1/4 cup Parmesan cheese (grated)
  • Salt and black pepper (to taste)
  • Olive oil
  • Fresh rosemary or thyme (optional)

Instructions

  1. Pat the steaks dry and season generously with salt and pepper.
  2. Heat a cast iron skillet over medium-high heat and add olive oil.
  3. Sear the steaks for 3-4 minutes per side for medium-rare, basting with melted butter infused with smashed garlic and herbs.
  4. Remove the steaks from the skillet and let them rest for 5-7 minutes.
  5. In the same skillet, melt the remaining butter over medium heat.
