  • 3 large Eggs
  • 1 1/3 cup Whole Milk
  • 2 Tablespoons Fresh Lime Zest
  • 1 Tablespoon Fresh Lime Juice
  • 2 cups Sugar
  • 2 cups Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1/2 cup Butter (softened)
  • 8 ounce Cream Cheese (softened)
  • 44 1/2 cups Powdered Sugar
  • 1 Tablespoon Fresh Lime Juice (for frosting)
  • 1/2 teaspoon Fresh Lime Zest (for frosting)
  • Fresh Limes (sliced for garnish)

Instructions

  1. Preheat oven to 325°F.
  2. In a mixing bowl, combine oil, eggs, milk, lime zest, and juice. Mix for about 2 minutes until smooth.
  3. In another bowl, whisk together sugar, flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients using a rubber spatula until just combined.
  4. Pour batter into greased cake pans and bake: two 9-inch pans for 30–36 minutes or three 8-inch pans for 20–26 minutes. Check doneness with a toothpick.
  5. Let cool completely before frosting with cream cheese frosting.
