  • 32 oz chicken broth
  • 13 oz turkey kielbasa (chopped)
  • 45 medium russet potatoes (peeled and cubed)
  • 6 oz shredded sharp cheddar cheese
  • 1/3 cup heavy cream
  • 2 cups chopped kale
  • Seasonings: garlic powder, onion powder, thyme, salt, black pepper, red pepper flakes
  • Olive oil and lemon juice

Instructions

  1. Peel and cube the potatoes into ½”–1” pieces.
  2. In a large soup pot, heat olive oil over medium-high heat; sauté chopped onion and turkey kielbasa until caramelized.
  3. Remove sautéed ingredients; add cubed potatoes along with seasonings and broth.
  4. Bring to a boil; cook until potatoes are tender (10–15 minutes).
  5. Mash about 75% of the potatoes for texture; stir in cream and cheese until melted.
  6. Return kielbasa mixture to the pot; mix in chopped kale and remove from heat.
  7. Serve hot with garnishes as desired.
