  • 12 tablespoons Olive Oil
  • 1 pound Ground Beef
  • 1 large Onion (diced)
  • 4 cloves Garlic (minced)
  • 1 (15-ounce can) Diced Tomatoes (don’t drain)
  • 1 (15-ounce can) Tomato Sauce
  • 1/3 cup Tomato Paste
  • 4 cups Chicken Broth
  • 12 cups Water
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon Sea Salt
  • Black Pepper (to taste)
  • 8 ounces Bowtie Pasta (uncooked)
  • 1/2 cup Ricotta Cheese
  • 2 ounces Mozzarella Cheese (shredded)
  • 1/4 cup Parmesan Cheese (shaved, shredded, or fresh grated)
  • 1/4 cup Fresh Parsley (chopped)

Instructions

  1. In a large pot over medium heat, heat olive oil. Sauté diced onions until translucent, then add minced garlic and cook until fragrant.
  2. Add ground beef to the pot and brown it, breaking it apart as it cooks. Drain excess fat if necessary.
  3. Stir in diced tomatoes, tomato sauce, tomato paste, chicken broth, water, Italian seasoning, sea salt, and black pepper. Bring to a boil.
  4. Add uncooked bowtie pasta directly into the boiling mixture. Reduce heat to simmer and cover for about 10 minutes or until pasta is al dente.
  5. Remove from heat and stir in ricotta cheese until well combined. Top with mozzarella cheese and allow it to melt slightly before serving.
  6. Ladle soup into bowls and garnish with freshly chopped parsley.
