  • Scrapings from 1 large vanilla bean
  • 1/2 cup unsweetened plant-based milk
  • 4 cups powdered sugar
  • 1/4 cup unsweetened cashew yogurt
  • 1/4 cup vegan butter, softened
  • 1/4 cup coconut cream
  • 2 1/2 cups all-purpose flour

Instructions

  1. Prepare the icing by whisking the icing ingredients until smooth. For the filling, mix yogurt and butter in a stand mixer until fluffy, then add coconut cream and some icing. Refrigerate.
  2. In a bowl, dissolve yeast in lukewarm plant-based milk. Stir in coconut milk, sugar, and salt; mix well. Gradually add flour until smooth dough forms. Let rise in a greased bowl until doubled.
  3. Roll out dough into squares and let rise again for about 30 minutes.
  4. Heat oil in a frying pan to 350°F (180°C). Fry dough squares until golden brown on each side.
  5. Fill beignets with lavender cream using a pastry bag and top with icing before serving warm.
