  • 1 cup blueberries (fresh or frozen)

  • ½ cup powdered sugar
  • 2 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan with parchment paper or nonstick spray.
  2. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a large bowl, mix melted butter, sugar, vanilla extract, eggs, lemon zest, and lemon juice until well combined.
  4. Gradually add the dry ingredients and milk alternately into the wet mixture until just mixed.
  5. Fold in blueberries gently to avoid breaking them.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55–60 minutes until a toothpick comes out clean.
