  • 2 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press mixture into the bottom of a springform pan.
  3. Bake crust for 10 minutes and let cool completely.
  4. In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, lemon juice, lemon zest, and baking powder until just combined.
  5. Pour filling over the cooled crust and bake for 40-45 minutes or until the center is slightly jiggly.
  6. Allow to cool gradually in the oven with the door ajar for about an hour before refrigerating for at least four hours.
