  • Fresh honeycomb for topping

Instructions

  1. Preheat oven to 325°F (163°C) and prepare a springform pan with parchment paper.
  2. Mix graham cracker crumbs, sugar, melted butter, and salt; press into the pan and bake for 10 minutes. Cool completely.
  3. Steep lavender in lemon juice for about 10 minutes; strain if desired.
  4. In a mixing bowl, beat cream cheese until smooth. Gradually add sugar, then eggs one at a time. Mix in sour cream, lemon juice with lavender, lemon zest, and vanilla extract.
  5. Pour filling over the cooled crust and bake in a water bath for 50–60 minutes until just set. Cool in the oven for an additional 30 minutes before refrigerating for at least 4 hours or overnight.
  6. Top with pieces of honeycomb before serving.
