  • 2 large egg whites
  • 1/4 teaspoon cream of tartar

Instructions

  1. To prepare the dough, whisk together flour, powdered sugar, and salt. Cut in chilled butter until crumbs form. Shape into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat oven to 350°F (175°C). Roll out chilled dough to about 1/8-inch thickness and cut out circles. Place on a parchment-lined baking sheet and bake for 8-10 minutes until lightly golden. Cool completely.
  3. For the lemon filling, whisk together lemon juice, granulated sugar, egg yolk, cornstarch, and lemon zest in a saucepan over medium heat until thickened. Cool completely.
  4. Beat egg whites with cream of tartar until soft peaks form; gradually add sugar while beating until stiff peaks form.
  5. Assemble cookies by adding lemon filling on each cookie and topping with meringue. Broil for 1-2 minutes until meringue is lightly golden.
