  • 1 cup uncooked orzo
  • 2 mini cucumbers (chopped)
  • 1 cup grape tomatoes (quartered)
  • 2 tablespoons red onion (chopped)
  • 2 cups cooked chicken (shredded or diced)
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons fresh basil (sliced thin)
  • Dressing: lemon juice, olive oil, honey, garlic, salt & pepper

Instructions

  1. Cook the orzo according to package directions until al dente. Drain and rinse under cool water.
  2. While the orzo cooks, chop cucumbers and tomatoes, mince garlic, and slice basil.
  3. In a large mixing bowl, combine cooked orzo with cucumbers, tomatoes, red onion, chicken, parmesan cheese, and basil.
