  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese (optional)
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water to remove bitterness.
  2. In a saucepan, combine rinsed quinoa with water. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until water is absorbed.
  3. Fluff the quinoa gently with a fork and let it cool.
  4. In a large bowl, mix cooled quinoa with chickpeas, cucumber, red onion, and parsley.
  5. In a separate small bowl, whisk together olive oil, lemon juice, lemon zest, garlic powder, salt, and pepper.
  6. Pour the dressing over the salad mixture and toss well to combine.
  7. Add crumbled feta if desired before serving.
