  • 2 cups raspberries
  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 6 large eggs
  • 3/4 cup freshly squeezed lemon juice
  • 1 cup unsalted butter
  • 1 tablespoon corn starch
  • 1/4 teaspoon salt

Instructions

  1. Prepare raspberry puree by cooking 2 cups of raspberries in a saucepan over medium heat until soft. Mash slightly and strain through a sieve to remove seeds. Let cool.
  2. For the crust, mix melted butter, flour, sugar, cornstarch, and salt. Press into a greased 9×13 inch baking pan and bake at 350°F (175°C) for about 20 minutes until golden.
  3. In another bowl, whisk together sugar and cornstarch, then add eggs one at a time along with lemon juice and cooled raspberry puree until smooth.
  4. Pour custard over the pre-baked crust and bake for an additional 25 minutes or until set in the center. Cool completely before slicing.
