  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 1/2 cup milk
  • 3 large egg yolks
  • 1/4 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • 1/2 cup powdered sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 425°F (220°C). In a saucepan, combine water and butter; bring to a boil.
  2. Remove from heat and stir in flour and salt until smooth. Let cool slightly before adding eggs one at a time.
  3. Pipe long strips onto a baking sheet lined with parchment paper and bake for 20-25 minutes until golden brown.
  4. For the filling, whisk together sugar, cornstarch, milk, egg yolks, lemon juice, and zest in another saucepan over medium heat until thickened.
  5. Allow filling to cool before folding in whipped cream. Fill cooled eclairs using a pastry bag.
  6. Mix powdered sugar with lemon juice for glaze; drizzle over filled eclairs and top with fresh raspberries.
