  • 10 tbsp salted butter, melted
  • 2 1/2 cups raspberries (fresh or frozen)
  • 24 ounces cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 3/4 cup sour cream
  • 6 tbsp lemon juice

Instructions

  1. Preheat the oven to 325°F (162°C) and prepare the crust by mixing graham cracker crumbs, melted butter, and sugar. Press into a springform pan.
  2. For the raspberry swirl, cook raspberries with sugar, lemon juice, and water until thickened. Cool before use.
  3. Beat cream cheese until smooth; add sugar, flour, eggs, sour cream, lemon juice, and zest gradually until combined.
  4. Layer half of the cream cheese filling over the crust, drizzle half of the raspberry swirl on top, then repeat. Swirl gently.
  5. Bake for about 2 hours or until set but jiggly in the center. Cool gradually in the oven before refrigerating for at least four hours.
