  • 4 cups cooked day-old jasmine rice
  • 6 oz ground chicken
  • 2 tbsp chopped lemongrass
  • 4 cloves garlic, chopped
  • 3 tbsp fish sauce
  • 3 tbsp sugar
  • 1 shallot, sliced
  • 24 Thai chilies, chopped
  • Cooking oil

Instructions

  1. In a small bowl, mix fish sauce, sugar, and black pepper for the sauce.
  2. Heat a wok over high heat and add cooking oil.
  3. Stir-fry shallots, lemongrass, Thai chili, and garlic until fragrant.
  4. Add ground chicken, breaking it apart as it cooks until golden brown.
  5. For optional eggs: push the chicken to one side, scramble the eggs on the other side, then mix together.
  6. Add cold jasmine rice and pour in the prepared sauce around the edges; stir until well combined.
  7. Finish by stirring in chopped cilantro before serving.
